Pumpkin Waffles



Soft and fluffy pumpkin waffles.
They're perfect for cold rainy mornings and cozy Autumn evenings.

Ingredients:


Please note, ingredients listed below should make for about 5 waffles.

- 1 cup of mashed pumpkin
- 2 cups of flour
- 2 or 3 tablespoons of sugar
- cup of semi-skimmed milk
- 2 tablespoons of cinnamon
- 2 tablespoons of melted butter
- water ( optional, to make the mixture less chunky)
- powdered sugar (optional)

*You can use store-bought pumpkin mash. Because of its texture, it's perfect for making waffles. If you use homemade mash, make sure it's not too chunky (mix it well with water to make it smoother).

Instructions:

Mix all the ingredients (except the butter) together in a bowl. Mix them well, creating a smooth, watery paste (use a spoon or a hand mixer). Set mixture aside and preheat waffle iron.


Add melted butter (and, optionally, a splash of water) and mix it in before transferring batter into the waffle iron (use ladle or a plastic spoon).



Spread batter evenly, make it approximately 1,5 cm thick.



Cook until golden for perfect fluffiness.
Sprinkle with powdered sugar and serve immediately.
